ABOUT OUR BEERS
Expertly brewed by the Brew Crew, our beers have won consistent acclaim nation wide. Our crew brews with uncompromising professionalism and respect for the traditional brewer’s craft and trade, meeting all the rules set forth in the strictest law about production of beer The German Reinheitsgebot of 1516 A.D., using a brewing method that is as traditional as it is simple. Only four ingredients are used; WATER, MALT, HOPS and YEAST.
The WATER is very important to the quality of our beers. That is why we ultra purify ours at both of our locations. This is how we can maintain a consistent product in two different locations.
The MALTS that we use as the basic ingredient for our beers are only the best Harrington and Klages 2-Row malts. To create the different styles, we then add roasted malt from England the best and most consistent crystal malts available in the world.
The HOPS that we use are only the most consistent and high quality; some come from the Pacific Northwest, some from Germany, and some from Czechoslovakia.
The YEAST goes to work on the sugars from the malt, producing alcohol and carbon dioxide. Our YEAST is a blend of ale and lager strains, allowing us to make different beers with it and call them either ales or lagers. Brew tours are available by arrangement. We hope that you enjoy yourself while sampling all the different styles of beer that we offer.
As part of the filtration, the beer is transferred to the bright tanks that also double as serving tanks. The carbonation (bubbles) is adjusted at this time and is the same from batch to batch just like everything else in the brewing process.
We cannot divulge our hopping or malt blends nor what exact temperatures and times to use - that is left to the individual "brewmaster" to find out and guess - just like eating in a good restaurant - you try to guess the recipe, try to copy it at home, only to find yourself coming back to the restaurant for more of the original. Leave the brewing to us - we'll leave the drinking to you, well almost. Sample all the different styles and pretend it's an educational experience - Prost, Cheers, Salute, Santee, etc. etc.
The whole process takes about 8 hours for the brew day and another 4 hours for the filtration and carbonation with at least three weeks of fermentation and aging in between.
